1/2 cup mayonnaise
1 Tbsp white sugar
1 tsp lemon juice
1/8 tsp salt
3 red delicious apples, peeled, cored and chopped
1 cup thinly sliced celery
1/2 cup chopped walnuts
1/2 cup raisins
mixed greens
In a medium bowl, whisk together first 4 ingredients. Stir in apples, celery, walnuts and raisins. Chill for 1 hour. Serve over mixed greens.

Mexican Chicken Salad by Kim
A twist on regular chicken salad with a kick of spice!
1 carrot, coarsely sliced
1 rib celery, sliced
1 lb boneless chicken tenders or breasts
4 canned jalepenos, seeded and diced
1/3 cup mayonnaise
4 green onions, thinly sliced
1/2 cup sour cream
1 tsp ground cumin (or to taste)
1 tsp chili powder (or to taste)
Bring 4 cups of water to a rolling boil. Add carrot, celery and chicken. Cook 10 minutes or until done. Remove from heat and let stand 10 minutes. Drain liquid and discard veggies. Let chicken cool, shred into bite-sized pieces. Mix well with remaining ingredients and add seasonings to taste. Makes 2 cups.

Vince's Balsamic Vinaigrette (by Kim)
this makes quite a bit...I halved the recipe and it still made plenty for Josh and I for the week.
Blend First:
1/2 cup balsamic vinegar
1/2 cup sugar
Juice of about 1 small lemon
2 T garlic
1 t Italian spices
1 t salt
Add in slowly and emulsify:
1 cup olive oil
**Hand mixer works best to prevent separating.
